Let’s continue with some more food today. I’ve been having a little pause from my recipe posts since I’ve been travelling and it’s quite hard to get any cooking done in a hotel room, but now that I’m back again, I wanted to share you one of my favourite weekend recipes.

I bet there’s a lot more people than me who loves a good old pizza on the weekend. Even though we live right around the corner from one of the best pizzerias here in Stockholm, we still make our own pizzas at home once in a while.

Yesterday was one of those evenings that definitely called for a pizza Friday at home. The inspiration for the pizza recipe started from my favourite salad actually; chevre, fig & ruccola. Such a delicious and fresh combo, not only in a salad bowl but also on a pizza.

What is needed

pre-made pizza base
crushed tomatoes
chevre
cherry tomatoes
ruccola
fresh figs
honey
walnuts

How to cook it

1) Put the pre-made pizza bases on baking tray. Spread a thick layer of crushed tomatoes on top of them. If you wish for more taste, use garlic or herb flavoured crushed tomatoes instead of the natural ones.

2) Chop the cherry tomatoes and the chevre and put on top of the crushed tomatoes. Put the pizzas into the oven, 200 degrees about 10-13 minutes.

3) When the cheese has melted and the tomatoes have baked a bit, take the pizzas out of the oven. Then chop the figs and put on the top of the pizzas together with the ruccola. Drizzle some honey on top as a finishing touch, it’s the perfect match with the chevre and the ruccola. Also if you want your pizza to be a bit more crunchy, add some walnuts as well.
